VANKAYA DOSAKAYA MUKKALA PACHADI


Ingredients
1.Vankai/Brinjal/Aubergine - 3 Medium size
2.Dosakaya/Yellow cucumber - 1big
3.Green chillies -3-4
5.Garlic - 3cloves
6.Oil - 1tbsp
7.Salt - to taste 
8.Tamarind paste - 1/2tbsp
For seasoning
1.Oil - 1tsp
2.Mustard seeds - 1/4tsp
3.Urad dhal - 1/4tsp
4.Chana dhal - 1/4tsp
5.Curry leaves -few
6.Hing - pinch
7.Dry red chilli - 1
Method
1.Heat oil in pan.Fry green chillies till it changes slighlty its color.Roughly cut brinjal into pieces and add in the oil.Add jeera,salt and saute till the brinjal becomes tender.Turn off the flame and keep it aside to cool it down.
2.Peel cucumber and scoop out the seeds.Cut into small pieces.
3.Grind brinjal pieces,tamarind paste,green chillies,salt,garlic,and 1/8th cup of cucumber slices to the brinjal mixture and grind into rough texture.
4.Mix this mixture into cucumber pieces and mix well.Adjust salt.
5.Heat oil in a pan for seasoning.Add oil.Once the oil is piping hot,add mustard seeds,jeera,chana dhal,urad dhal,hing and curry leaves and fry till the dhal turns its color.Mix this seasoning to the pachadi.
6.Serve with rice.
