Chandrakala
Ingredients
1.APF - 1cup
2.Ghee - 1/4 cup
3.Baking soda - 1pinch
4.Oil - for deep frying
For Filling
1.Khoya - 2/3 cup
2.Nuts( sliced almonds,pistachios,walnuts finely) - 1/4cup
3.Sweetened coconut (grated)(optional)- 1/8 cup
For sugar syrup
1.Sugar - 1cup
2.water - 1cup
3.Cardamom Pwd - 1tsp
Method:
1.In a bowl sieve APF,baking soda.Mix well .To this add ghee,water and make a smooth dough with out any lumps.
2.Divide the dough into 20 equal size balls.
3.Mix all the ingredients under filling section in a bowl.
4.Roll each ball into poori and keep aside.
5.Place spoon ful of stuffing inside and cover it with another poori.Seal the edges by pressing inside.Repeat the same process with the rest of the balls.
6.Add sugar ,water and boil it til it reaches slightly sticking or one thread consistency.Add cardamom powder.
7.Heat oil in a deep pan in medium flame.The temperature of the oil should not be piping hot.
8.When the oil is enough hot slowly drop chandrakalas into oil and fry them in medium flame for 3mts and change the medium hi for2mts again change theflame to medium flame and fryuntil it changes color.Turn over on both sides to cook on all sides.
9.Add the fried chandrakalas into syrup and leave them for 5mts.
