Fruit cake

Makes 2 cakes

1.All purpose flour - 2 1/4 cup
2.Baking powder - 2tsp
3.Baking soda - 1/2tsp
4.Mixed dried Fruit - 2-3 cups
5.Sugar - 1 1/4cup
6.Cardamom powder - 1/2tsp
7.Cinnamon powder - 3/4tsp
8.Eggs- 4
9.Butter - 1cup
10.Vanilla essence - 1tsp

For caramel
1.sugar - 1/2 cup
2.water - 1/2 cup+1tbsp
For caramel Preparation:
Heat the pan and add sugar ,1tbsp water. Heat in medium flame.Slowly the sugar starts melting and change in color.Stir gently in between or you can swirl the vessel. When it turns dark golden brown turn off the flame and add 1/2 cup water and mix well.Keep this aside.
1.Mix well butter,sugar and vanilla essence by using hand blender until smooth and creamy.
2.To this add eggs and whisk it for 4 minutes.
3.In a bowl sieve flour,baking soda,baking powder.Slowly add the flour little by little into wet ingredients and mix well until well blended.

4.Mix cardamom powder,cinnamon powder,caramel and dried fruits to the batter and fold gently.
5.Pre heat the oven for 350 degrees .
6.Grease the cake tin and pour the batter into cake tin and bake in oven for 10 minutes in 350 degrees and reduce the temperature to 325 degrees for 45 minutes or until the tooth pick comes out clean.
