Vankai Pachadi


1Brinjal (medium) - 5
2.Oil - 4 tsp
3.Jeera - 1/2tsp
4.Garlic - 4
5.Tamarind paste - 1/2 tsp
6.Salt - to taste
7.Green chilies - 4

1.Cut the Brinjals into medium pieces and add in salt water.So it won't turn into color.

2.Heat pan.Add 1tsp oil.Add green chillies and fry them in medium hi flame for 2 mts.Keep aside.
3.Add remaining oil anf fry the brinjal pieces.To this add jeera,garlic and cook in until brinjals becomes cooked(not mushy).
4.Keep a side and cool it .Now grind the green chillies,with tamarind paste and brinjal mixture. Make into a coarse paste by adding little water if needed .Serve with hot rice.

Notes:Adjust your spice and salt level according to your taste.If you prefer you can do seasoning.
