Kalakand
Ingredients
1.Milk - 4cups + 6cups
2.Lemon juice - 6tbsp
3.Sugar - 2cups
4.Pistachios - for garnishing
5.Ghee - 1tbsp
6.Cardamom powder - 1tsp
Method
1.Boil 4 cups milk in a heavy bottom vessel.Reduce it to half.Keep stirring in between on medium flame.
2.In a separate vessel add 6 cups of milk and boil.Once the milk starts boiling add lemon juice and mix well.After 1 mt the milk starts curdling.Strain the curdled milk and wash it under cold water to avoid any lemon smell.
3.Add this paneer,sugar to the boiling milk and mix well in medium low flame and keep stirring till the moisture leaves and the mixture becomes thick.Turn off the flame.
4.Grease the plate with ghee and transfer the mixture into the plate.Keep it in refrigerator for 1hour.The mixture becomes hard and cut into desired shape.
5.Garnish with pistachios.
