Vankai Kobbari vepudu

1.Brinjal (small,tender) - 9
2.Fresh coconut(grated) - 1/4 cup
3.Salt - to taste
4.Oil - 5tbsp
5.Red chilli powder - 1tsp
6.Turmeric powder - 1/4tsp
7.Mustard seeds- 1/2tsp
8.Red chilli - 1
9.Channa dhal - 1tsp
10.Curry leaves - 5
11.Onion - 2medium (chopped)
12.Ginger(minced) - 1tbsp
13.Garlic(minced) - 6 cloves
14.Jeera - 1/4 tsp
1.Cut the brinjal into medium pieces and add 1tsp salt on top the brinjal pieces and mix well. 
2.Grind garlic,ginger and coconut into coarse paste with out adding water.
3.Heat oil in a pan.Add mustard seeds,once it starts spluttering add jeera,red chilli and curry leaves.Add chopped onion and fry for 5 minutes.
4. Add chopped brinjal pieces,turmeric powder and fry  for 3minutes.
5.Add the blended coconut masala to the brinjals and fry in high flame for 2minutes and reduce the flame to medium flame for 12 minutes by stirring in between.
6.Turn the flame to high , add red chilli powder,adjust salt and fry for 1minute.Turn off the flame.
6.Serve hot with rice.
