Samosa



Ingredients
1.All purpose flour - 1 cup
2.Salt - pinch
3.Oil - 2tbsp
4.Ajwain seeds  - 1tsp
For stuffing
1.Boiled potatoes - 4(big)
2.Green peas - 1/4 cup
3.Salt - to taste
4.Red chilli powder - 1tsp
5.Coriander powder - 1/2tsp
6.Turmeric powder - 1/4tsp
7.Chat masala - 1/2tsp
8.Amchoor powder - 1/2tsp
9.Coriander leaves  - 1 tbsp (finely chopped)
10.Mint leaves(optional) - 1tbsp(chopped)
11.Oil - 2tbsp 
12.Ginger garlic paste - 1tsp
13.Oil- for deep frying
Method
1.In a bowl mix flour,salt,ajwain,oil and make into crumble.Knead the dough by adding little water at a time and make into dough.Keep this a side for 15 mts by covering the lid.
2.In a wide pan heat oil.Add ginger garlic paste,red chilli powder,turmeric powder and fry for 1mt in medium flame.Add 2tbsp water and add all the spices.Add mashed potatoes,green peas and mix well till the spices combine to the mashed potatoes.Finally add coriander leaves,mint leaves.Turn off the flame and keep stuffing aside.
3.Knead the dough again and divide the dough into 6 equal balls.
4.Make a thin chapati and cut into 2 equal halves.With one half  apply water on edges and make a cone shape by over lapping two straight ends together.
5.Place stuffing inside the cone and seal the edges with water.
6.Heat oil in a deep frying pan.Once the oil is hot reduce flame to medium and slowly drop the samosas in oil.Fry them in medium high flame on both sides till it changes golden color.
7.Serve with green chutney or tamarind chutney.
