Vankaya fry




Ingredients
1.Brinjal (small,Tender) - 9(wash and cut into quarters)
2.Salt - to taste
3.Turmeric powder - 1/2tsp
 Seasoning
1.Oil - 3tbsp
2.Mustard seeds - 1/2 tsp
3.Jeera - 1/2tsp
4.Urad dhal - 1/2 tsp
5.Curry leaves - 5
6.Red chilli - 1
Dry roast and make fine powder
1.Dry red chilli - 5
2.Coriander seeds - 11/2 tsp
3.Chana dhal - 11/2 tsp
4.Jeera - 1/2tsp
5.Methi seeds - few
6.Sesame seeds - 1tsp
Method 
1. Heat oil in a pan.Add mustard seeds,once it starts splutters add jeera,urad dhal,red chilli and curry leaves.
2.Add  brinjal pieces,turmeric powder,salt and fry in medium flame for 5minutes.
3.Dry roast red chilli,coriander seeds,methi seeds,chana dhal,jeera and sesame seeds.Make coarse powder.
4.Add this powder to brinjal pieces and fry in medium flame by covering the lid for 8-10 minutes.
5.Remove lid adjust salt and fry in high flame for 2 minutes.
