Gutti Vankaya













Ingredients
1.Brinjal - 10(make slits and keep the stalk intact )
2.Onion - 2big(roughly chopped)
3.Red chilli powder - 2tsp
4.Coriander powder - 1/2tsp
5.Cumin powder - 1/4tsp
6.Salt - to taste 
7.Garlic - 6 cloves
8.Jaggery (powdered) - 2tbsp
9.Sesame seeds - 1tsp
10.Tamarind paste - 1tbsp
11.Ghee - 2tsp
12.Oil - 2tbsp+1tbsp 
13.Turmeric powder - 1/4tsp
Method
1.Heat  2tbsp oil and fry onion for 5-6mts.Blend the onion,garlic,sesame seeds into paste.
2.To the onion paste add jaggery,salt,coriander powder,cumin powder,red chilli powder,turmeric powder,ghee and mix well.
3.Slit the eggplants with out the the stalk separate.Stuff 1tbsp filling to the egg plants and keep aside.
4.Heat oil in a pan.Add stuffed egg plants,remaining onion paste and cook in high flame for 2mts.Reduce flame to medium and cook for  3-4mts by covering the lid.
5.Add tamarind paste and 1/4 cup water to the brinjal and cook in medium until the brinjal gets cooked.Turn the flame to high and cook till the gravy gets thickened or till you get desired consistency.
6.Serve with sambar as a side dish with rice.

Vankaya fry




Ingredients
1.Brinjal (small,Tender) - 9(wash and cut into quarters)
2.Salt - to taste
3.Turmeric powder - 1/2tsp
 Seasoning
1.Oil - 3tbsp
2.Mustard seeds - 1/2 tsp
3.Jeera - 1/2tsp
4.Urad dhal - 1/2 tsp
5.Curry leaves - 5
6.Red chilli - 1
Dry roast and make fine powder
1.Dry red chilli - 5
2.Coriander seeds - 11/2 tsp
3.Chana dhal - 11/2 tsp
4.Jeera - 1/2tsp
5.Methi seeds - few
6.Sesame seeds - 1tsp
Method 
1. Heat oil in a pan.Add mustard seeds,once it starts splutters add jeera,urad dhal,red chilli and curry leaves.
2.Add  brinjal pieces,turmeric powder,salt and fry in medium flame for 5minutes.
3.Dry roast red chilli,coriander seeds,methi seeds,chana dhal,jeera and sesame seeds.Make coarse powder.
4.Add this powder to brinjal pieces and fry in medium flame by covering the lid for 8-10 minutes.
5.Remove lid adjust salt and fry in high flame for 2 minutes.

Kakarakaya vepudu with bellam


Ingredients
1.Bitter gourd - 5 large
2.Onion - 2medium(chopped)
3.Jaggery(grated) -4 tbsp
3.Salt- to taste
4.Red chilli powder - 11/4 tsp
5.Turmeric powder - 1/2tsp
6.Oil - 3tbsp

For seasoning
1.Oil - 3tbsp
2.Mustard seeds - 1/2 tsp
3.Jeera- 1/2 tsp
4.Curry leaves - few
5.Red chilli -1
6.Chana dhal - 1/2tsp


Method
1.Wash and lightly scrap the bitter gourd and cut into thin slices.Keep into the bowl.Add little salt on top of it and squeeze it till water oozes out.(By doing this, it will reduces bitterness). Keep the bitter gourd pieces into a separate plate.
2.Drain the bitter gourd pieces into water and squeeze very well.
3.Heat 3tbsp oil in a pan.Add biter gourd slices and fry in medium flame till the bitter gourd changes color.this will take 15mts.
4.In the mean time add oil.Add mustard seeds,Once it starts splutter add Channa dhal and fry for 30 sec add jeera,red chilli and curry leaves.To this add onions and fry for 5mts or till it is done by 3/4th.
5.Add fried bitter gourd,
jaggery into seasoning and fry till it changes brown color. Cook in medium flame for 5-6mts.
6.Add red chilli powder,adjust salt.Mix well let it fry for 2mts and turn off the flame.
7.Serve with rice.
