Vankai kottimera karam

1.Brinjal - 10(small purple,tender)
2.Onion - 1(chopped)
3.Turmeric powder - 1/4tsp
4.salt - to taste
5.Green chillies - 4
6.Coriander leaves - 1 cup(chopped,loosely packed)
7.Oil - 5tsp
8.Mustard seeds - 1/4tsp
9.Cumin seeds - 1/4 tsp
10.Curry leaves - 5
 11.Hing - pinch

1.Wash brinjal and cut into pieces.sprinkle some salt and mix to avoid any discoloration.
2.Make a paste of coriander leaves,green chillies and keep a side.
3.Heat wide bottom pan with oil.Add mustard seeds,once it starts spluttering add jeera,curry leaves and hing.
4.Add onions and fry for 3mts.
5.Add brinjal pieces and fry in high flame for 2mts,add salt,turmeric powder and mix.Reduce the flame to medium for 5-6mts.
6.Add corinader,chilli paste to brinjal pieces and stir for 2-3 mts in medium high flame.
7.Serve with rice.
