Vanakai gutti fry

1.Brinjal(small) - 6
2.Red chilli powder with garlic - 1tsp
3.Salt - to taste
4.Turmeric powder - 1/2tsp
5.Onion - 1 large (chopped)
6.Oil - 1/4 th cup
For seasoning
1.Mustard seeds - 1/2tsp
2.Jeera - 1/2tsp
3.Curry leaves - few
4.Oil - 2tbsp

1.Wash the brinjals and trim the stalk.Slit the brinjals into quarters with out breaking the stalk.Repeat the same for rest of the brinjals.Rub the salt inside the brinjals.
2.Heat oil in a wide pan.Arrange the brinjals and fry in medium hi flame by turning both sides in between to avoid burning for 8 mts or till brinjals
cooks well.
3.Transfer the brinjals to the plate.
4.Heat 2tbsp oil in pan add mustard seeds,once it starts spluttering add curryleaves,add onions and fry for 5 mts.Add turmeric powder and mix well Add fried brinjals and fry for 2mts in med flame.Add red chilli powder and mix gently for 1mt.
5.urn off the fame and transfer them into a bowl
6.Serve with rice.
