Vankai vepudu/Brinjal fry

Ingredients
1.Brinjals(small) - 8
2.Onion - 1 large(chopped)
3.Turmeric powder - 1/2tsp
4.Red chilli powder(garlic flavored) - 1tsp
5.salt - to taste

For seasoning
1.Oil - 5 tbsp
2.Jeera - 1/2 tsp
3.Mustard seeds -1/2tsp
4.Curry leaves - few
5.Channa dhal - 1/4tsp

Method:
1.Cut the brinjals into pieces and add into the bowl.Sprinkle little salt on top of the pieces and mix well using the spoon.
2.Heat oil in a wide bottomed pan.Add mustard seeds,once it splutters add Channa dhal ,jeera and curry leaves.
3.Add onions,turmeric powder and fry for 5mts.
4.Once the onions get fried add the brinjal pieces and fry in medium high flame by stirring in between with out covering any lid.It would take approximately 10-15mts.
5.Add red chilli powder,add salt if necessary ,mix it and fry it in medium high flame for 5mts and turn off the flame.
6.Serve with rice.
