Kakarakaya vepudu with bellam

1.Bitter gourd - 5 large
2.Onion - 2medium(chopped)
3.Jaggery(grated) -4 tbsp
3.Salt- to taste
4.Red chilli powder - 11/4 tsp
5.Turmeric powder - 1/2tsp
6.Oil - 3tbsp

For seasoning
1.Oil - 3tbsp
2.Mustard seeds - 1/2 tsp
3.Jeera- 1/2 tsp
4.Curry leaves - few
5.Red chilli -1
6.Chana dhal - 1/2tsp

1.Wash and lightly scrap the bitter gourd and cut into thin slices.Keep into the bowl.Add little salt on top of it and squeeze it till water oozes out.(By doing this, it will reduces bitterness). Keep the bitter gourd pieces into a separate plate.
2.Drain the bitter gourd pieces into water and squeeze very well.
3.Heat 3tbsp oil in a pan.Add biter gourd slices and fry in medium flame till the bitter gourd changes color.this will take 15mts.
4.In the mean time add oil.Add mustard seeds,Once it starts splutter add Channa dhal and fry for 30 sec add jeera,red chilli and curry leaves.To this add onions and fry for 5mts or till it is done by 3/4th.
5.Add fried bitter gourd,
jaggery into seasoning and fry till it changes brown color. Cook in medium flame for 5-6mts.
6.Add red chilli powder,adjust salt.Mix well let it fry for 2mts and turn off the flame.
7.Serve with rice.
