Bendakaya Bangaldumpa Fry




Ingredients
1.Bendakaya - 1/2pound(nip the ends and cut into slices)
2.Potatoes - 2(boiled,Peeled and cubed)
3.Red chilli powder - 1/2tsp
4.Turmeric powder - 1/4tsp
5.Salt - to taste
6.Dhania powder - 1/2tsp
7.Methi powder - small pinch
For Seasoning
1.Oil - 1tbsp
2.Mustard seeds - 1/2tsp
3.Jeera - 1/2tsp
4.Chana dhal - 1tsp
5.Urad dhal - 1tsp
 
Method
1.Heat oil in a wide bottom pan.Add mustard seeds,once it starts spluttering add jeera,channa dhal,urad dhal and fry till it changes its color.
2.Add okra/bhindi into oil and fry for 2mts.Add 1tbsp curd to reduce slime.
3.Add tumeric powder,salt,methi powder and saute till the okra becomes tender.Add boiled potato pieces and mix well.
4.Add red chilli powder,dhania powder,methi powder and mix well till the spices coats to the okra and potato.
5.Serve hot with rice or chappathi

Bendakaya Pulusu




Ingredients
1.Okra - 1/2pound(Nip the ends and cut into 1 inch pieces)
2.Thick Tamarind juice - 1/2cup
3.Jaggery - 2tbsp(adjust more or less)
4.Salt - to taste
5.Red chilli powder - 1tsp
6.Toamto - 1
7.Turmeric powder - 1/4tsp
8.Onion - 1(chopped)
For seasoning
1. Oil - 1tbsp
2.Mustard seeds - 1/2tsp
3.Jeera - 1/2tsp

Method
1.Mx all the above ingredients under ingredients section.Add 11/2cup water to this and pressure cook for 5-6mts or 2 whistles.
2.Remove lid ,once the pressure releases and cook in medium flame for 3-4mts.
3.Heat oil in a pan.Add mustard seeds,once it starts spluttering add jeera and mix this seasoning to the pulusu.
4.Serve with rice.

Okra fry/Bendakai fry


I
ngredients
1.Okra - 1/2 pound(wash,remove both ends and cut into pieces)
2.Onion - 1 medium(chopped finely)
3.Red chilli powder - 1tsp
4.Turmeric powder - 1/2tsp
5.Salt - to taste
6.Green chillies - 2(chopped)
For seasoning
1.Oil - 4tbsp
2.Mustard seeds - 1/2 tsp
3.Jeera - 1/2tsp
4.Curry leaves - few

Method:
1.Heat oil 3tbsp oil in a pan.Add mustard seeds,when it starts spluttering add jeera and curry leaves.Add okra into the oil and fry in medium high flame till it is half way done by stirring in between.
2.Add chopped onions,green chillies,turmeric powder to the okra and fry till the onions and okra fry well in medium flame by stirring in between.
3.When the okra and onions fry well add salt,red chilli powder and fry for 2mts and then turn off the flame.
4.Serve with rice.

Notes:To reduce slime add 2tbsp curd to the okra pieces while frying.
