Chettinad chicken




Ingredients
1.Chicken - 2 pounds(wash and cut into bite size pieces)
2.Shallots - 30
3.Curry leaves - few sprigs
4.Salt - to taste
5.Turmeric powder -1/2 tsp
6.Red chilli powder -1 1/2 tsp
7.Coconut milk - 4tbsp
To make into coarse paste
1.Ginger - 2tbsp(peeled and finely chopped)
2.Garlic - 4(finely chopped)
Dry roast and make into fine powder
1.Coriander seeds - 1tbsp
2.Cumin seeds -1tsp
3.Dry red chillies - 6
4.Fennel seeds - 1tsp
5.Cardamom  - 5
6.Cloves - 4
7.Shredded fresh coconut - 1/4 cup
8.Cinnamon - 1 medium stick
9.Black cardamom - 1
10.Poppy seeds - 1tbsp
Method
1.Heat oil in a pressure cooker.Add chopped shallots,curry leaves and fry till the onions turn into nice color.
2.Add curry leaves,ginger garlic paste and fry for 1minute.
3.Add chicken pieces ,turmeric powder,salt,red chilli powder and mix well to the chicken.Turn the flame into medium and cook for 3mts.
4.Add coconut milk and mix well  and cook in medium high flame.
5.In the mean time dry roast all the spices under dry roast section and make into fine powder.
6.Add this masala to chicken and mix well  till the masala powder coats well to the chicken.Add 1/2 cup water and pressure cook in high flame for 3mts and reduce flame to medium and cook for 5mts.Turn off the flame.
7.Remove the lid once the pressure releases and transfer it to the bowl.
8.Serve with rice or chapatti.




Notes 
1.Do not add more coconut than the above mentioned quantity.
2. Add more water if necessary to cook chicken.

Coconut Chicken


Ingredients
1.Chicken - 1whole chicken (cut into bite size pieces)
2.Fresh Coconut - 11/4 cup
3.Shallots - 30(Peel and cut into halves)
4.Curry leaves - 1-15
5.Coriander seeds - 3tsp
6.Salt - to taste
7.Green chillies - 9
8.Red chillies - 4
9.Ginger garlic paste - 2tbsp
10.Oil - 5tbsp

Method
1.Marinate the chicken with turmeric powder and salt for 10 mts.
2.Heat 2tbsp oil in a pan,Add coriander seeds and fry for 3mts.To this add shallots and fry for 4 mts.
3.Add fresh coconut pieces,green chillies,red chillies ,curry leaves ,salt and fry for 5 mts in medium flame.
4.Blend all the ingredients and grind into a coarse paste.
5.Heat 3tbsp oil in a pan.Add marinated chicken pieces and cook on high flame for 2mts.
6.Once it starts cooking add onion and coconut paste to the pieces and cook on high flame for 4mts.
7.Turn the flame into medium and cook for 15-18 mts in medium flame by covering the lid.Keep stirring in between.
8.Turn off the flame once you get desired consistency.
9.Serve with rice or chapatti.

Chicken Fry



Chicken Fry
This is one of the easiest method that I usually prepare in the home when ever there is no time.

Ingredients:
1.Chicken -whole cut into medium Pcs
2.Dhania powder - 1 1/2 tsp
3.Chilli powder - 2 Tsp
4.Turmeric powder - 1/2 tsp
5.Salt - to taste
6. Fresh lemon Juice -
2 tbsp
7.ginger garlic paste - 2 - 3 tsp
8.Oil - 3 tbsp
9.Curry leaves - few
10.Green chillies - 2 to 3
11.onions - 1 cup(chopped finely)
12.coriander leaves - for garnishing
13.Mint leaves(chopped) - 1/4 cup
14.Coriander leaves (chopped)- 1/4 cup



Method:
1.Marinate the chicken with chillipwd,turmeric pwd,ginger garlic paste,lemon juice,mint leaves and coriander leaves for 10 minutes.

2.Boil the chicken until it is completly cooked or pressure cook by adding little water for 1 whistle or 5 mts .
3.Heat the pan with oil.Add boiled chicken pieces and fry the chicken in high heat for 5 mts.Keep stirring.Add curry leaves, gren chillies and mix gently.
4.Add dhania pwd to chicken and mix well.Fry the chicken in mediumlow flame for 30 mts.keep stirring occasionally.That way it won't burn .
5.When it turns the colour to brown color turn off the stove.
6.Serve with rice or as a snack.
